If I only had a nickel every time I was asked these questions…
I always encourage healthy snacks throughout the day, such as fruit and veggies. I also understand the urge to have a little something sweet. We all want a sweet snack from time-to-time. I know I do! So, I am so excited to share a healthy BUT absolutely delicious snack with you, Peanut Butter Protein Poppers!
They are super easy to make and loaded with nutrients. I am all about foods having a purpose. Meaning, each ingredient should be healthy and have a function in your body. For example, peanut butter is a good source of plant based protein and essential fatty acids. Flax seeds are loaded with fiber and antioxidants. Coconut contains healthy essential fatty acids. You get the point!
So, without further ado, here is the recipe for my Peanut Butter Protein Poppers. And, if you are allergic to nuts you can replace nuts with a seed butter, such as sunflower seed or chia seed butter. Enjoy!
Peanut Butter Protein Poppers
- 1 cup Whole Grain Oats such as steel cut oats, uncooked
- 1/3 cup Coconut Flakes
- 1/2 cup Peanut Butter can substitute with any nut or seed butter
- 1/2 cup Flaxseeds ground
- 1 Tbsp raw cacao powder
- 1/4 cup raw honey
- 1 tsp vanilla extract
- Combine all ingredients in a mixing bowl. Wet hands and combine ingredients.
- Roll into balls. Enjoy!
- These will be soft at room temperature so I suggest storing them in the freezer or the refrigerator. They will last 1-2 weeks if stored in the freezer. They thaw quickly, in about 1-2 minutes, so you won't have to wait too long to enjoy!
