One of my favorite soups is lentil soup with sweet potato and spinach. It’s hearty, delicious, and packed with nutrients. When I provide dietary advice to my clients I always encourage them to choose foods that serve a purpose and this soup certainly fits that mold. Foods that serve a purpose are those that help maintain a healthy body weight and decrease the risk of disease. Lentils are a good source of plant based protein and fiber which decreases the risk of heart disease and certain cancers. Sweet potatoes are loaded with antioxidants, such as beta-carotene, which help protect the body from oxidative damage. I like to make a big pot of this soup each week as the flavors intensify after a day or two…leftovers are the best! A cup of lentil soup will leave you feeling full and satisfied and is hearty enough to be served as a meal. I like to garnish my soup with a couple slices of avocado.
This soup is nutritious, delicious, simple and quick to make, and budget friendly. Try it out…let me know what you think!
