Sunday is my day to unwind and do nothing…except enjoy the sunshine and salty air with my husband, Rob. Summer will be here before you know it and you will find yourself at the beach, lounging by the pool, boating, biking, etc. My husband and I have a boat and love to spend our Sundays on the ocean relaxing and spending time with friends. However, the sun and fun can leave me feeling a bit drained and dehydrated so I need a quick pick-me-up meal when we get home. My watermelon and arugula salad is refreshing and always does the trick.
I make a few different watermelon salads, especially throughout the summer months when watermelon is juicy and sweet…plus, watermelon is a great way to hydrate after a day in the sun. Today, I am excited to share with you a simple, delicious, and refreshing salad that you can make after a day of fun.
I love using fresh ingredients to prepare our meals. There are a couple of rules I live by and one of them is to avoid foods that live in a box on a shelf. Processed foods live in a box and I prefer fresh over processed any day. This recipe includes fresh arugula, watermelon, lemon, oranges, feta cheese, and mint. The flavor combinations enhance the ingredients, for example, the lemon in the dressing and the saltiness from the feta brings out the sweetness of the watermelon. I can’t wait for you to try this refreshing salad.
For this recipe, I include a simple citrus vinaigrette. If you don’t typically make salad dressing I urge you to give it a try. It is super easy to make…I promise! True story!! And once you start making your own salad dressing you will never purchase store bought again.
My husband and I enjoyed this salad with a roasted chicken we made on the grill. This is a great salad to bring to any summer BBQ. I hope you enjoy it as much as I do.
Watermelon Arugula Salad
For the lemon vinaigrette
- 1/4 cup lemon fresh squeezed
- 1/4 cup orange juice fresh squeezed
- 1/2 cup extra-virgin olive oil
- 1 tbsp raw honey
- salt and pepper to taste
For the salad
- 5-6 cups arugula rinsed
- 2 cups watermelon cut into cubes
- 1/2-1 cup mint leaves cut into strips
- 8-10 ounces feta cheese crumbled
- Whisk the orange juice, lemon juice, raw honey, and salt and pepper. Slowly drizzle the olive oil into the dressing as you continue to whisk.
- Combine the arugula, watermelon, mint, and feta cheese. Drizzle dressing and serve immediately.
